Thought I'd let you know about a great finish I've used, designed for wooden worktops. It's called 'Worktop Finish' (I guess the clue's in the title...) and is from a company called Classic Finishes (www.classicfinishes.co.uk).
We'd bought a 1940/50 oak dining table on eBay, sanded off all the hideous dark varnish and didn't know whether to wax or oil it in it's new-found glory. I came across Classic Finishes and the guy I spoke to was really helpful; he'd concocted the product himself as more and more people were using wood in their kitchens but weren't happy with the finishes they used. Although ours is on a dining table, it's seen it's share of thrills and spills including the usual wine and oil-based salad dressings, and each time I've wiped it off with a damp cloth, leaving no trace. Fab.
Cost me £19.95 for a litre, plus p&p, which came to almost twice the cost of the table...
